The evening begins with a helicopter ride to the largest icefield in the southern region of Canada, where you can observe mountains covered in snow, forests, and impressive views.
Once you arrive, you are greeted with a glass of champagne before touring the inside of the cave, which leads to the dining area. The sous-chef David Baarschers, from the Four Seasons Resort & Residences Whistler, prepares a five-course dinner – the first includes fresh oysters and caviar served on snow, followed by grilled Ossobuco with a touch of thyme.

Those who enjoy dinner in the ice cave also directly contribute to the continuation of the Head-Line Mountain Holidays project called “White is Green,” in partnership with Simon Fraser University. The project is a research study about glaciers and polar ice caps, which involves collecting data in the mountains of British Columbia and sharing this information with other universities and institutions.
